Very simple. If Brooke was IT why did he chose others over her ?

Because he wasn't always sure. Sometimes he thought he loved another woman more, but that never lasted long. Sooner or later he always realized that he couldn't live without Brooke, no matter how many other women he had loved in his life and no matter what Brooke had done to disappoint him.

He wanted Bridget when engaged to Brooke, he chose Katie when engaged to Brooke, He kissed Quinn when engaged to Brooke, Brooke SURE wanted him when he married Caroline Jr

He NEVER wanted Bridget. Bridget was the one who wanted him. He only agreed to the first kiss because he was hoping it would make her realize that she was mistaking sisterly love for romantic feelings, and he wasn't engaged to Brooke then. It happened the day before he reunited with Brooke and proposed to her. And the second kiss, which was instigated by Bridget once again, happened after Brooke had stopped the wedding, when he thought he had lost her.
He never wanted Quinn more than Brooke either. There was some kind of physical attraction, but he didn't have any loving feelings for her at all. When it came to choosing between her and Brooke the day before the wedding he didn't even think twice.
And choosing Katie only happened because he was in a huge midlife crisis when he returned from Paris, mistaking their bonding over poetry for true love while still being mad at Brooke for her affair with Bill.

TPTB also had Ridge stated Taylor was the love of his life before she died, THEN he moved on.

Yes, before she died, which was 20 years ago. And when she returned, his feelings for her were never the same again because her absence had made him realize that Brooke was the true love of his life after all.

Ridge can go back to the love he LOST not choose to leave …

What? So he didn't choose to dump Taylor for Brooke in 2006? Or he didn't choose to leave her at the altar twice to go back to Brooke?
