Hope was super annoying today

If it is a private club, then Eric probably has a permanent room for himself and his family. That is how it works. Once the rooms are all spoken for the next member goes on a list, so when a person decides they no longer want a room at the club, or they die and the family no longer wants it, then the next person on the list can retain it. So, Eric is not renting the room by the day, he retains it by the year.

Douglas was at a pool party. Could be the people who were hosting the party told all the parents to come to their private rooms to pick up their children. Maybe they had lunch served to the kids in the rooms.

It was just an avenue to allow Hope to see Deric. Hope was not being a buttinski. She happened on Deric. She was concerned for Quinn because Quinn seemed sad.
