Sheila is a nurse. She knows what it means to be allergic to bee poison, people have died stung by one bee only. No one would believe her if she said it was just a prank. And she locked him in. He screamed for help but she only watched and smirked. (Yes, I know that Sheila was the only witness so they would know only what she told them.)

Being a nurse doesn't mean you always think of the ramifications of your actions. If she had said she didn't realize he was allergic and just wanted to scare him because he was blackmailing her, it would be manslaughter. I don't think anyone is saying (at least I'm not) it wasn't murder, just that in a case like this it would be almost impossible to prove intent.
