When did Ridge choose Taylor because he loved her more?

After Taylor died and left for years Ridge settled for Brooke and had RJ.
Ridge only retuned to her after Taylor admitted the BBB, not because he couldn’t live without Brooke (and RJ)

His marriage to Taylor had never been happy again after that vow renewal in 2005. They were seeing a marriage counselor and towards the end of the year Ridge went on a long business trip to have time away from Taylor and clear his head. He was definitely shown missing Brooke in those months after the vow renewal, and the way he didn't even think twice about leaving Taylor after she confessed about her night with James made it pretty clear that he had just been waiting for an out, because Brooke was the one he truly wanted to be with and couldn't live without.

After that he stayed with Brooke but Taylor was gone most of time … and even then Ridge chose many others over Brooke

But not for long. He always realized sooner or later that Brooke was still the one.
